If you login using Telegram web, there's a setting called something along the lines of "filter explicit content" or something like that. If you change that and kill and restart the app it should apply to all platforms, even iOS.

When I enter "web.telegram.org" into my browsers (Chromium) address bar, it always directs to Telegram k or z, whichever I used last. But I never directs to the classic one. I've deleted cookies and website data, but it still directs to one of the new versions, so I think it's saved on the server.

You could use telegram web only. But it's by far the worst way of using telegram. If on computer you can use telegram desktop as well.
